Caprese Salad
4 large tomatoes 8 to 9 ounces Mozzarella cheese Basil or oregano Freshly milled black pepper Extra virgin olive oil
Slice the tomatoes and mozzarella, and arrange alternately on plates or a serving dish, so that they overlap slightly. Arrange small basil leaves or oregano on top, and sprinkle with pepper. Drizzle with plenty of olive oil, and serve with white bread.
Yield: 6 to 8 servings
